- 2 pound (900g) corned beef brisket, plus pickling spice packet
- 1/2 cup (125ml)honey
- 4 clovesgarlic, minced or crushed through a garlic press
- 1/2 cup whole-grain Dijon mustard

- 1/4 teaspoonCayenne pepper, optional
- 1/2 teaspoonpaprika
- 1/2 teaspoon black pepper
- 1 pound (450g) small carrots, cut into chunks
- 1 pound (450g)mixed baby potatoes
- 2 tablespoons chopped fresh parsley leaves

Directions
1. How to make this slow cooker corned beef recipe?: In a large skillet with a little oil, brown the corned beef on all sides for a couple of minutes. Then set aside.
2. Arrange small whole potatoes and carrots in the bottom of the slow cooker, making some space in the middle for the corned beef. Sprinkle with pepper and a pinch of salt. Then place corned beef brisket, fat side up, on top. Sprinkle with the spice packet that came with the corned beef.
3. In a small bowl, combine honey, mustard, garlic, oil, paprika, Cayenne pepper, and pepper. Stir to combine pour over the corned beef. Add 1 cup beef broth and 1 cup water or more to the slow cooker
4. Cover and cook the corned beef on low heat for at least 6 hours, we recommend 8 hours. You might add some water from time to time if you like.
5. Remove from the slow cooker and thinly slice the corned beef against the grain. Serve the slow cooker corned beef immediately with carrots and potatoes on the side, garnished with parsley. Enjoy! ❤️
